This is my recipe for my favorite vegetarian fall harvest bowl. The perfect combination of sweet and savory. Sweet potatoes are my favorite fall vegetable and I love finding ways to include them in my fall recipes. You can tweak this recipe to add in your personal favorite fall vegetables, like shaved brussels sprouts, kale, or roasted veggies. Adding in some fruit could also be a great way to add in some extra flavor, like cranberries or figs. Enjoy!
Ingredients
Bowl
- Mixed greens
- Quinoa
- Chickpeas (or rotisserie chicken if not vegetarian)
- Shredded white cheddar
- Red apple
- Roasted sweet potato
- Handful of walnuts
Dressing
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 5 sage leaves
- 1 garlic clove
- 1 tsp dijon mustard
- 1 tbsp maple syrup
- Pinch of red chili flakes
- Pinch of salt and pepper
Directions
- Add all ingredients to a bowl.
- Mince sage leaves and garlic.
- Mix all dressing ingredients together and shake.
- Pour dressing on your bowl and enjoy!
