This is a recipe inspired by the fabulous Tieghan Gerard of Half-Baked Harvest. I added a twist to her original recipe for healthy green fried rice to bring in some extra nutritious ingredients.
Ingredients
- 1 clove garlic
- handful of fresh cilantro
- handful of basil
- 2 cups of spinach
- 1/2 serrano chile pepper
- pinch of salt
- 1 tbsp coconut oil
- 2 oz green beans
- 2 oz Broccoli
- 1/2 tsp grated ginger
- 1/4 cup frozen peas
- 1 cup white rice
- 1 egg
- Lime, green onion, and sesame seeds for garnish
Directions
- Rinse rice and mix with 2 cups of water. Wait until boiling and then turn to a simmer and cover.
- Roast unpeeled garlic in a pan for about 8 minutes or until golden brown.
- Add garlic, cilantro, basil, spinach, serrano chile pepper and salt into a blender or food processor and blend. Set aside.
- Trim and cut the green beans in half
- Cook green beans and broccoli for 2-3 minutes, add spinach and cook for another minute, then add grated ginger and garlic and cook until fragrant. Set aside
- Add coconut oil to a pan and add in white rice, the green sauce, and veggies. Add in frozen peas and simmer until cooked through.
- In a separate pan, crack your egg and fry to your preferred doneness.
- Spoon fried rice into a bowl, squeeze half a lime on the rice and serve with the egg on top. Add soy sauce, sriracha, sesame seeds, or green onion for extra flavor.
